Gavalas Santorini Natural Ferment, 2015, 13% ABV, PDO Santorini
100% Assyrtiko, unoaked. Gavalas is a native & 3rd generation winemaker on the island of Santorini with a long and substantial family tradition for making Vinsanto. His Vinsantos are made in the traditional foot press of the winery, they are viscous and full in flavour whilst low in alcohol. This Santorini PDO example is made with natural yeasts and has more body, riper palate and longer finish than his standard Santorini label. All fruit come from the Southern, lava rich part of the island.
